Wondering what Tubaani is? It is steamed black-eyed pea pudding, well-known delicacy from the country’s northern. The meal is a paste formed from black-eyed pea flour and water that is boiled after being wrapped in the sweet-tasting aromatic leaves of the maranthaceous herb, Thaumatococcus daniellii. Tubaani is served with gravy or pepper and onions sliced thinly, tossed in heated vegetable oil.

STEPS IN THE PREPARATION OF TUBAANI
- Black eyed pea flour and water should be combined in a bowl, and the mixture should be beaten in a circular motion until fluffy.
- Boiling water is added to a saucepan and left on the burner.
- Wash corn husk, banana leaves, or Thaumatococcus daniellii leaves.
- Set a few of the leaves on fire in the saucepan to create a foundation.
- Wrapping the fluffy black eyed pea flour mixture in leaves and serving small portions
- Place the sealed mixture in the blazing water and let it cook for a while.
- Cover the surface of the water in the saucepan with a few of the leaves.
- For around two hours, steam the contents of the saucepan under a cover.
